Banana & dark chocolate gluten free muffins

If you haven’t noticed by now, my baking recipes usually involve dark chocolate!

While sick with some virus this week, I had a random craving for banana muffins and so I made these, they are delicious and not very sweet.

Ingredients:

  • 300g ripe banana (approx 3 medium sized bananas), smashed

  • 3 eggs (pasture-raised is best)

  • 80ml maple syrup

  • 80ml of extra virgin olive oil

  • 2 teaspoons vanilla extract

  • 1/2 teaspoon ground cinnamon

  • 2 teaspoons gluten-free baking powder

  • 250g almond meal

  • 1/3 cup dark chocolate (over 70% cacao), chopped into small pieces

Method:

  • Mix all of the ingredients in a medium-sized bowl

  • Place mix into muffins cups in a muffin tray

  • Bake at 170°C for 15-20 minutes, depending on your oven. Watch closely to make sure the tops don’t burn. Take them out of the oven when the tops start to turn golden.

  • Leave the muffins in baking tray for 5 minute to sit.

  • Enjoy! Lovely with some added grass-fed butter or honey on top.
